Sear the Beef:
- Heat olive oil in a skillet over medium-high heat. Season the beef with soy sauce, sesame oil, garlic, ginger, black pepper, & red pepper flakes. Sear the beef strips for 2-3 minutes per side until browned but not fully cooked (this locks in serious flavor!).
Build the Broth:
- In the crockpot, combine beef broth, soy sauce, hoisin sauce, rice vinegar, brown sugar, & chili paste. Give it a good stir—you’ll smell the savory magic already.
Slow Cook:
- Add the seared beef strips, mushrooms, red bell peppers, & carrots to the crockpot. Cook on Low for 6-8 hours or High for 3-4 hours.
Add the Noodles & Greens:
- About 30 minutes before serving, stir in the lo mein noodles & bok choy or spinach. Let everything cook until the noodles are tender & have soaked up all that delicious broth.
Serve & Enjoy:
- Ladle the goodness into bowls, add halved hard-boiled eggs, & garnish with green onions & sesame seeds. Grab your coziest blanket, settle in, & enjoy every comforting bite.
