Cozy Crockpot Beef Lo Mein

This Crockpot Beef Lo Mein recipe is my winter go-to. It’s loaded with tender beef strips, perfectly cooked lo mein noodles, a rich, savory broth, & the perfect finishing touch: soft, flavorful hard-boiled eggs. It’s the kind of dish that wraps you in comfort from the inside out.

Ingredients
  

For the Beef:
  • 1 lb Beef Strips sirloin or flank steak
  • 2 tbsp Soy Sauce
  • 1 tbsp Sesame Oil
  • 1 tbsp Olive Oil for searing
  • 2 Garlic Cloves minced
  • 1- inch Piece of Ginger grated
  • 1 tsp Black Pepper
  • 1 tsp Red Pepper Flakes optional for heat
For the Broth:
  • 4 cups Beef Broth
  • 2 tbsp Soy Sauce
  • 1 tbsp Hoisin Sauce
  • 1 tbsp Rice Vinegar
  • 1 tbsp Brown Sugar
  • 1 tbsp Chili Paste or Sriracha optional for spice
Add-Ins:
  • 8 oz Lo Mein Noodles
  • 1 cup Mushrooms shiitake or cremini, sliced
  • 1 cup Red Bell Peppers thinly sliced
  • 2 cups Bok Choy or Spinach
  • 1 cup Carrots julienned
  • 2-4 Hard-Boiled Eggs halved
  • Green Onions & Sesame Seeds for garnish

Method
 

Sear the Beef:
  1. Heat olive oil in a skillet over medium-high heat. Season the beef with soy sauce, sesame oil, garlic, ginger, black pepper, & red pepper flakes. Sear the beef strips for 2-3 minutes per side until browned but not fully cooked (this locks in serious flavor!).
Build the Broth:
  1. In the crockpot, combine beef broth, soy sauce, hoisin sauce, rice vinegar, brown sugar, & chili paste. Give it a good stir—you’ll smell the savory magic already.
Slow Cook:
  1. Add the seared beef strips, mushrooms, red bell peppers, & carrots to the crockpot. Cook on Low for 6-8 hours or High for 3-4 hours.
Add the Noodles & Greens:
  1. About 30 minutes before serving, stir in the lo mein noodles & bok choy or spinach. Let everything cook until the noodles are tender & have soaked up all that delicious broth.
Serve & Enjoy:
  1. Ladle the goodness into bowls, add halved hard-boiled eggs, & garnish with green onions & sesame seeds. Grab your coziest blanket, settle in, & enjoy every comforting bite.
