Listen babe, I am here for fall as much as the next girl.

A big part of this is because of the food & desserts I associate with this season.

But, I’d be lying if I said I want to spend my time slaving in the kitchen to make a pie each time I get a craving for a sweet & spicy autumn treat.

Look no further, single serving apple crisp. Yep, you can enjoy this fall staple with half the effort (&, no sharing the goods)!

Let’s dive into this quick & delicious treat!

Ingredients:

For the Apple Filling:

  • 1 medium apple (such as Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extractFor the Crispy Topping:
  • 3 tablespoons old-fashioned rolled oats
  • 2 tablespoons all-purpose flour
  • 1 tablespoon brown sugar
  • 1 tablespoon unsalted butter, cold and diced
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a small mixing bowl, combine the diced apple, granulated sugar, ground cinnamon, and vanillaextract. Toss everything together until the apples are evenly coated with the sugar and spices.
  3. Find a ramekin or a microwave-safe mug to prepare your single-serving apple crisp. Transfer theapple filling mixture into the ramekin, pressing it down gently to create an even layer.
  4. In another bowl, mix the rolled oats, all-purpose flour, brown sugar, and a pinch of salt. Add thediced cold butter and use your fingers to work the butter into the dry ingredients until the mixtureresembles coarse crumbs.
  5. Sprinkle the crispy topping evenly over the apple filling in the ramekin, covering it entirely.
  6. If baking, place the ramekin in the preheated oven for about 20-25 minutes, or until the topping isgolden brown and the apple filling is bubbling. If using a microwave, microwave the ramekin onhigh for about 2-3 minutes, or until the topping is cooked and the filling is heated through.
  7. Carefully remove the apple crisp from the oven or microwave (it will be hot!). Allow it to cool fora few minutes before indulging. You can enjoy it as-is or take it to the next level by adding a scoop of vanilla ice cream or a dollop of whipped cream.
