Healthy Chia Seed Pudding

We are lucky because we have Katie back again to share her super easy recipe!

Today, I want to share with you one of my favorite healthy recipes: chia seed pudding!

Not only is this pudding delicious & satisfying, but it’s also packed with nutrients & health benefits thanks to the mighty chia seeds.

First, let’s talk about the benefits of chia seeds. These tiny seeds are a great source of fiber, protein, healthy fats, & various vitamins & minerals. They are also rich in antioxidants, which can help protect against cell damage & inflammation in the body. Chia seeds have been linked to numerous health benefits, such as improved digestion, heart health, & weight management.

Now, let’s get to the recipe!

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any other milk of your choice)
  • 1 tbsp honey (optional)
  • 1/2 tsp vanilla extract (optional)
  • Fresh fruit or nuts for topping

Directions:

  1. In a bowl, mix together the chia seeds, almond milk, honey, & vanilla extract (if using).
  2. Whisk the mixture until the chia seeds are evenly distributed.
  3. Let the mixture sit for 10-15 minutes to allow the chia seeds to absorb the liquid & form apudding-like consistency.
  4. Stir the mixture again & transfer it to an airtight mason jar or container.
  5. Refrigerate the pudding for at least 2 hours (or overnight) to allow it to thicken & set.
  6. When ready to serve, top the pudding with your favorite fresh fruit or nuts.

This recipe is so simple & versatile — you can customize it to your liking by adding different flavorings (like cocoa powder) or toppings (another topping I LOVE using is non-dairy whipped cream).

You can also play around with the texture by adjusting the amount of liquid or chia seeds you use. Adding more chia seeds will make the consistency thicker, & adding more liquid will make it thinner.

Pro-tip: if you do not like the consistency of chia pudding, try blending the chia pudding in a blender after completing step 2. The chia seed will still thicken nicely with time, but will have more of a pudding-like consistency.
