But making it in a non-instant way? That’s where the magic happens. There’s something extra special about crafting a bowl from scratch, especially when the cold air is biting outside.

This Crockpot Beef Lo Mein recipe is my winter go-to. It’s loaded with tender beef strips, perfectly cooked lo mein noodles, a rich, savory broth, & the perfect finishing touch: soft, flavorful hard-boiled eggs. It’s the kind of dish that wraps you in comfort from the inside out.

Here’s what you need to create this cozy winter dish:

For the Beef:

  • 1 lb beef strips (sirloin or flank steak)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil (for searing)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp black pepper
  • 1 tsp red pepper flakes (optional for heat)

For the Broth:

  • 4 cups beef broth
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp chili paste or sriracha (optional for spice)

Add-Ins:

  • 8 oz lo mein noodles
  • 1 cup mushrooms (shiitake or cremini), sliced
  • 1 cup red bell peppers, thinly sliced
  • 2 cups bok choy or spinach
  • 1 cup carrots, julienned
  • 2-4 hard-boiled eggs, halved
  • Green onions & sesame seeds for garnish

How to Make It:

  1. Sear the Beef:
    Heat olive oil in a skillet over medium-high heat. Season the beef with soy sauce, sesame oil, garlic, ginger, black pepper, & red pepper flakes. Sear the beef strips for 2-3 minutes per side until browned but not fully cooked (this locks in serious flavor!).
  2. Build the Broth:
    In the crockpot, combine beef broth, soy sauce, hoisin sauce, rice vinegar, brown sugar, & chili paste. Give it a good stir—you’ll smell the savory magic already.
  3. Slow Cook:
    Add the seared beef strips, mushrooms, red bell peppers, & carrots to the crockpot. Cook on Low for 6-8 hours or High for 3-4 hours.
  4. Add the Noodles & Greens:
    About 30 minutes before serving, stir in the lo mein noodles & bok choy or spinach. Let everything cook until the noodles are tender & have soaked up all that delicious broth.
  5. Serve & Enjoy:
    Ladle the goodness into bowls, add halved hard-boiled eggs, & garnish with green onions & sesame seeds. Grab your coziest blanket, settle in, & enjoy every comforting bite.
