Today, I’m excited to share a recipe that’s become a summertime favorite in my home: Honey Lime Grilled Chicken.

+ Ingredients

  • 4 chicken breasts or thighs
  • 1/4 cup honey
  • 1/4 cup freshly squeezed lime juice
  • Zest of 2 limes
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon black pepper
  • 1 teaspoon Creole seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Fresh cilantro for garnish (optional)

+ Preparation

1. Marinating the Chicken:

  • In a bowl, whisk together the honey, lime juice, lime zest, olive oil, garlic, black pepper, Creole seasoning, onion powder, smoked paprika, & garlic powder.
  • Place the chicken in a resealable plastic bag or a shallow dish & pour the marinade over it, ensuring the chicken is well-coated.
  • Seal the bag or cover the dish & refrigerate for at least 30 minutes, but for the best flavor, let it marinate overnight.

2. Grilling Instructions:

  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade & let the excess drip off.
  • Grill the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165°F & has beautiful grill marks.
  • Remove the chicken from the grill & let it rest for a few minutes before serving.
